Waldorf-Esque Pasta Salad

This sweet and tangy pasta salad with orange poppy seed dressing is a tasty spin on the classic Waldorf salad with walnuts, apples, celery and grapes. It is the perfect side dish for those hot days when you just don’t want to turn the stove on. The salad dressing can be made in advance and keeps well up to a week refrigerated.



  • 8 oz or 227g penne noodles, cooked according to package directions (in this case 1pkg gogo quinoa gluten free penne) 
  • 2 cups packed fresh baby spinach leaves
  • 2 thinly sliced apples
  • 3-4 stalks celery, thinly sliced
  • ¾ cup red or black grapes cut in half
  • ½ red onion thinly sliced
  • 1 cup slightly toasted chopped walnuts



  • ⅓ cup extra virgin olive oil
  • ¼ cup apple cider vinegar
  • ¼ cup plain greek yogurt
  • 1 tablespoon dijon mustard
  • 2 tablespoons maple syrup or honey
  • ⅓ cup orange juice (juice of one orange)
  • 2 teaspoons poppy seeds
  • pinch of salt and pepper
  1. Combine all dressing ingredients in a jar, cover, and shake well. Set aside.
  2. Combine penne, spinach, apples, grape, celery, red onion, and walnuts in a large bowl and toss with dressing to coat.
  3. Serve immediately or cover and chill for 1 hour before serving.

Hot tip: if you are not serving right away, the trick to keeping your apples from browning is to squeeze a little lemon onto them before tossing into salad, the extra citrus does not effect the taste of dish.
