Butternut Latkes

Butternut latkes take a classic staple and turn it into a low glycemic appetizer or side.

  • 1/2  butternut squash, grated
  • 1 egg
  • 1/2 C flour
  • Nutmeg and thyme, to your liking
  • Salt and pepper, to taste
  • Olive Oil, for frying
  1. Peel and shred the butternut squash in a food processor
  2. Line a plate with paper towel to absorb excess oil
  3. Combine the squash, flour, egg, nutmeg, thyme, salt and pepper in a bowl and mix well
  4. On medium heat, warm up oil in a pan and once hot enough scoop three tablespoons worth of a latke mixture into pan, shaping them into rounds
  5. Cook for 2-3 three minutes and then flip cooking an additional two minutes or until cooked through and golden brown
  6. Transfer to paper towel lined plate and sprinkle with salt
