Breakfast Avocado Toast

Start the morning off right with this delicious and satisfying meal. Full of healthy fats and carbohydrates to help you stay energized and focused until lunch.


4 pieces of brioche bread

1 avocado

1 package (4 pieces) Hilary’s breakfast sausage

½ package mushrooms, thinly sliced

1 yellow onion, thinly sliced

½ anjou pear, thinly sliced

Alfalfa sprouts

Salt and pepper, to taste

Olive Oil

1 tbsp maple syrup

Walnuts, crushed, to garnish

  1. Heat a pan over high heat and add some olive oil. Once the oil is hot add your mushrooms and onions. Let cook for about 5 minutes to get a slight char and then reduce heat to low and add maple syrup. Stir periodically.
  2. Mash up the avocado and add salt, pepper and a touch of olive oil.
  3. In another pan over medium heat add olive and the breakfast sausages. Let them cook about 4 minutes on each side, slightly squishing them down, until cooked through.
  4. Add your sliced pear to your sauteed mushrooms and onions.Cook over medium heat for 5-10 minutes.
  5. Pop your toast into the toaster and toast to desired toastiness.
  6. Assembly time! Layer the mashed avocado onto the toasted brioche. Then add your veggie breakfast sausage, the sauteed mushrooms, onions and pears and top with alfalfa and walnuts!
