A nice simple Minestrone soup

we love this simple & clean winter soup.

It's perfect for helping you to clean out your fridge because anything goes.

It's hearty and delicious made with simple ingredients, organic... of course!


Minestrone literally means..: Hey a you! don't a be a so a lazy! 

                                         This is a not a di rocket a science!



You will need, (but don't be afraid to improvise) :

8 carrots

5 stalks of celery

1-2 onions

1/2 lb green beans (fresh or frozen)

1 bunch of black kale (any kind will do actually)

1 can of cannelini beans

1 can of whole tomatoes

1 can of crushed tomatoes

1 tbs Italian herbs

2 bay leaves

1 tsp oil (coconut's what I use)

1-2 boullion cubes (whatever you have on hand)

Salt & pepper

add water to the consistency you like


Chop chop chop.

heat up the oil

add the onions for about a minute (if you like garlic throw in as much as you like)

then add all the veggies and stir it all up

now throw in the herbs

Rinse the beans and add

time for the tomato!

add however much water you like and anything else you think goes

nice job! now you've got enough soup to feed all you friends & family
