

Sweet Potato Pancakes
Sweet potatoes are a great way to sweeten up your baked goods while benefiting from all the vitamins and minerals these nutrient dense root veggies have to offer.
Sweet potatoes are high in vitamin c and beta carotene (the antioxidant and pigment that gives them their orange color!) as well as soluble fibre. Soluble fibre is important because it attracts water and slows digestion helping to keep you satisfied over longer periods of time.
Ingredients
1 1/2 c gluten free flour (my preference is the cuisine soleil brand)
3 1/2 tablespoons baking powder
1 teaspoon salt
½ teaspoon ground nutmeg
½ teaspoon cinnamon
1-15oz can of farmer’s market sweet potato purée
2 eggs, beaten
1 ½ c Almond milk unsweetened
Butter or coconut oil for cooking
Directions
- Using a whisk mix all of your dry ingredients together.
- Beat the eggs well and then add the rest of your wet ingredients.
- Mix dry and wet mixture together.
- Melt butter or coconut oil in a pan and using a ¼ c measuring cup pour batter onto hot pan and fry, turning once until both sides are browned.
