Blueberry Coconut Chia Seed Pudding

Chia seed pudding is a wonderful option for breakfast, as a snack or for dessert.



2 cups of unsweetened coconut milk

4 tbsp whole chia seeds

2 cups of blueberries (1 cup for toppings)

½ tsp vanilla extract

1 tbsp maple syrup (or sweetener of choice)

Nuts and seeds, toppings

  1. Blend a cup of blueberries,maple syrup and vanilla with your coconut milk

  2. Pour your blueberry milk into a small mixing bowl, add you chia seeds and stir well

  3. Allow your pudding to sit overnight in the fridge

  4. When you are ready to serve your pudding add all the toppings you desire. I added blueberries, sunflower and flax seeds and coconut shavings

  5. Enjoy!
