Spicy Watermelon Gazpacho
Cool down with this super simple watermelon gazpacho. An excellent addition to picnics, bbqs or just enjoyed on its own.
Ingredients
- 2 medium tomatoes, diced
- 4 cups watermelon, cubed
- 1/4 C coriander
- 1 tbsp olive oil
- 1/4 tsp cumin
- 1/8 tsp cayenne
- salt & pepper to taste
Directions
- Using a pairing knife peel off the skin of the tomatoes and discard
- Chop up the watermelon and the tomatoes
- Add all your ingredients in a blender
- Garnish with pepper and coriander
