Spicy Watermelon Gazpacho

Cool down with this super simple watermelon gazpacho. An excellent addition to picnics, bbqs or just enjoyed on its own.

  • 2 medium tomatoes, diced
  • 4 cups watermelon, cubed
  • 1/4 C coriander
  • 1 tbsp olive oil
  • 1/4 tsp cumin
  • 1/8 tsp cayenne
  • salt & pepper to taste
  1.  Using a pairing knife peel off the skin of the tomatoes and discard
  2.  Chop up the watermelon and the tomatoes
  3. Add all your ingredients in a blender
  4. Garnish with pepper and coriander
