Salted Tahini Cookies

This recipe is great because it uses tahini, an ingredient found in most home pantries, in a unique way. To add more of the unexpected and delicious, get creative by adding toasted coconut, black sesame tahini, or matcha lemon chocolate to bring these cookies over the top in taste and presentation. These will certainly make "Whoa" moments at any potluck!

Ingredients
  • 1/2 c + 1tbsp flour
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1/2 tsp salt
  • 4 tbsp unsalted butter
  • 4 tbsp tahini *regular or black
  • 1/2 c sugar
  • 1 egg
  • 1/2 tsp vanilla

 

Optional/Swaptional

  • 3/4 c toasted coconut flakes  or
  • 3/4 c chocolate chunks
  • 1 matcha lemon chocolate bar
Directions

1.Prepare a baking sheet by lining with a silpat or parchment paper

2.Preheat oven to 350°F

3.Measure out your dry ingredients & sift or whisk

4.In a seperate bowl cream the butter and sugar

5.Add and mix well tahini of choice, 1 egg and vanilla

6.Add the wet to the dry and mix well

For regular tahini cookies:

  • Mix in toasted coconut flakes or chocolate chips
  • Place teaspoon balls onto prepared cookie sheet, and press down to flatten slightly, top each cookie with a sprinkle of coarse salt and garnish with extra coconut if desired

For black tahini cookies:

  • Place teaspoon balls onto prepared cookie sheet, and press down to flatten
  • Top each cookie with a sprinkle of coarse salt and garnish with a single chunk of matcha chocolate

 

7.  Cool the dough at least 30min. Taking the time to cool your dough makes it easier to form and relaxes the gluten which results in a chewier textured cookie. If you can, cool 4 hours or overnight for best results

8. Bake for 8-10 minutes, depending on your oven. The cookie should lose the glossiness of raw dough, and be formed, and slightly browned underneath. It is okay to take them out sooner than you might think and let them cook the rest of the way through on the residual heat of the pan before transferring then to a cooling rack

 

**N.b  For fun you can make marbled black and white tahini cookies by preparing both doughs, setting a portion of each aside and then takin a piece of white tahini cookie batter and a piece of black tahini batter and roll them together in a ball. Then press down to flatten lightly, sprinkle coarse salt and garnish with a couple coconut flakes AND/OR a piece of chocolate.
