Banana Mint "Icecream"

Cool down this summer with some home made banana mint "ice cream".

Bananas are packed with quick release glucose and slow release fructose making it an excellent option for breakfast or a mid afternoon snack and not just as a dessert. 

  • 2 bananas, cut up and frozen
  • 4-6 tbsp water (coconut milk optional)
  • 1 drop peppermint essential oil
  • Chocolate shavings, to decorate
  • Nuts and seeds, to decorate
  1. Cut up bananas and freeze for 2 hours
  2. Remove from freezer and let sit on counter for 10 minutes
  3. Add your bananas and peppermint oil to blender. Starting with 2 tbsps, blend together, gradually adding a tbsp more liquid  as necessary. Depending on your blender you may need to use a wooden spoon to push the "batter" down. You want your final result to be a creamy, smooth and thick texture
  4. Using an icecream scoop. Scoop mixture into two bowls and place in the freezer for 15 minutes
  5. Get creative with your toppings! I chose pumpkin seeds and chocolate shavings but feel free to experiment


Additional ideas 

-Adding a tsp of spirulina to make green icecream

-Adding a tbsp of nutbutter to add protein
